Welcome to the Volvoreta restaurant, where local produce and culinary tradition are the main protagonists. We invite you to journey back to the most authentic essence of ecological market cooking based on local produce.

We offer traditional cooking with its roots in the area, based on classic recipes, where local products provide the main ingredients and freshness the tools to exalt them. Our presentation is inventive, surprising and different.

From the 30th floor of the Eurostars Madrid Tower 5*, the Volvoreta Restaurant offers a spectacular panoramic view of the city and the surrounding mountains. Volvoreta sounds as butterfly in Galician and the colourful decoration, featuring a cloud of red butterflies in the dining room, pays tribute to this. This extraordinary atmosphere, work of the artist Nina Boy (Xavi Muñoz), frames a gastronomic proposal that combines, distils and harmonizes an infinity of flavours.

At the Volvoreta Restaurant we believe in passionate dedication to cooking. Under the guidance of chef Pablo García, together with Sergio Ansejo, Ismael Velasco and the Maître José Garnacho, the team works hard to provide our guests with exceptional local cuisine on a daily basis.
